These vegetarian burgers are a delicious alternative to traditional beef patties, featuring a savory blend of black beans and spices. Bursting with zesty flavors and wholesome ingredients, they are perfect for those looking to add more plant-based options to their recipes.
To start, preheat your grill to medium-high heat and give it a quick spray with cooking spray to prevent sticking. The grill will impart a wonderful smoky flavor to the burgers, enhancing their overall appeal.
In a medium sauté pan, heat some vegetable oil over medium heat. Sauté the diced zucchini, yellow onion and carrot until they become soft and translucent. This process helps to bring out the natural sweetness and flavors of the vegetables. Set the sautéed mixture aside to cool.
Now, it’s time to bring all the burger ingredients together. In a food processor, combine the cooled vegetable mixture with ketchup, barbecue sauce, quick oats, applesauce and an array of spices, including Italian seasoning, garlic powder, onion powder, cumin, paprika, chili powder, salt and black pepper. Add the drained and rinsed black beans to the processor as well.
Portion the black bean mixture into 8 patties and refrigerate them for about 10 minutes. This brief chilling time allows the patties to set and hold their shape during grilling.
Place the patties on the preheated grill and cook them for approximately 2 minutes on each side. To create an attractive crosshatch pattern, rotate the patties 90 degrees halfway through the cooking time on each side. While the patties are grilling, prepare a tangy and creamy yogurt sauce. In a medium bowl, combine chopped cilantro, lime zest, lime juice and plain nonfat Greek yogurt. Give it a good stir and season with salt and pepper to taste. This vibrant sauce adds a refreshing element to the burgers, complementing the spices and flavors.
